Drunken Noodles

These are called drunken noodles because they’re said to cure a hangover after a night of drinking. So grab an adult beverage and lets get cooking!

1 package of wide rice noodles


For the Sauce you’ll need:

8 Tablespoons rice vinegar

1/4 cup vegetable broth

1/2 cup coconut aminos or soy sauce

1/4 cup brown sugar/coconut sugar

3 Tablespoons Sriracha/hot sauce

1 teaspoon chili flakes

1 teaspoon freshly grated ginger or ginger powder


For the veggie mix you’ll need:

1 small diced Yellow Onion

5 cloves, minced Garlic

1/2 lime juiced

1 cup, fresh, chopped Basil

1 teaspoon fresh grated ginger

1 red/orange pepper julienned

1/2 bag of frozen broccoli


If you prefer to add in a protein, tof or chicken are great additions.


To make the noodles:

Place all your rice noodles in a wide dish/ bowl. Bring 4 cups of water to boil and pour over the rice noodles until they are completely submerged. Every few minutes, stir to loosen the noodles a bit, so they don't stick together. When they become limp, give them a taste to see if they’re cooked through. The flat rice noodles will take about ten minutes depending on thickness. Constantly test the noodles because they’ll become mushy if they overcook.

In a pan with a tablespoon of coconut oil, sauté your chopped garlic, peppers, ginger, onion. Once they're cooked thoroughly add in the broccoli and cook until its not as crunchy.

For the sauce:

Combine all ingredients in a sauce-pot and bring to a boil.

While the sauce is coming to a boil, drain the noodles and and rinse with cold water.


Add the noodles into the pan with the veggies, pour in the sauce and toss together.

Serve with freshly chopped basil, lime wedges, sesame seeds and chili flakes pending on how spicy you’d like them.
