*Makes ~5 gyros, pending on how much chicken you place into each one
For the CHICKEN:
1 pound of chicken (2 breasts) cut into strips/tenders
1/2 cup of Greek Yogurt
1 T lemon juice
1 tsp Sea Salt
1 tsp pepper
1 T dill-can be fresh or dried
1 T vinegar, I used Apple Cider but can use Red wine as well
In a container combine the above ingredients and marinade at least 2 hours if you are in a pinch. If possible marinating overnight is best and provides more of a flavorful, moist chicken.
Salad Mix:
2 tomatoes diced or you can use cherry tomatoes and slice small, you want around 1 1/2 cups of diced tomatoes
1 cucumber, peeled and diced
1 tsp sea salt
1 tsp pepper
1 tsp lemon juice
1/4 red onion diced
1 T apple cider vinegar
1 T chopped parsley- dried or fresh
For the TZATZIKI Sauce combine:
1/2 cucumber, peeled, grated and then squeezed with a paper towel to drain off the water
1 Cup Greek Yogurt
1/2 T lemon juice
1 T dill-can be fresh or dried
1 tsp sea salt
1/2 T vinegar- I used apple cider, you can use Red wine as well
2 cloves of garlic- minced
*I added a leaf of butter lettuce in the gyro, you can add your choice of lettuce or omit based on your preferences.
You'll need around 5 Pitas or Naan Breads- the 2 INGREDIENT NAAN recipe is what I used. I just rolled out the dough thinner think tortilla thickness, it will puff up as you cook in the skillet.
Cook your chicken on the stove or on a grill. On the grill cook 6 minutes each side or until its fully cooked or in a skillet on medium heat for about 10 minutes
Warm your pitas/naan bread.
Cut up your chicken into smaller pieces, almost shredded like. Top with the Tzatziki sauce, and the salad mixture, fold over your pita and enjoy!
