GF Vegan Apple Crisp

It's FALL YALL! That can only mean apple season is upon us. I love a good apple crisp, don't get me wrong pie is good so are dumplings but I'm not into crust that much, I prefer a sugary crumble topping.
Get yourself some good crisp apples, I love honeycrisp for apple crisp, but tend to use a blend of honeycrisp and Jona-Macs due to cost.
Preheat your oven to 350F
Lightly grease an 8x8 pan, you can use a larger pan if you want thinner crisp
For the apple mix:
Peel and slice 6 Large apples
In a large skillet add in apples;
4 T vegan butter
2 T Cinnamon
3 T lemon juice
1/2 cup brown sugar
Let cook until you see juices start to bubble up around 10 mins covered- 15 minutes uncovered, stir every few minutes to coat the apples in the juices
Remove 1/2 cup of juices and Whisk in 1T arrowroot powder or cornstarch to thicken it then add to the apple mixture and cook for another 3 minutes
Remove from heat and pour into the bottom of the baking dish
For the crumb:
1 Cup GF flour blend- I use CUP4CUP
1/3 Cup Sugar
1/3 Cup Brown Sugar
2T cinnamon
1/2 tsp salt
6T Vegan Butter- I used Miyokos
*Buy the 8 oz package, you'll use the rest when cooking up your apples
Using a pastry cutter or clean fingers, add your dry ingredients to a large bowl and crumble up the butter and dry mixture together until incorporated, you can have lumps it in, you don't want it to be completely uniform
Add on top of the apple mix and bake for 25-30 minutes!
