Lime In The Coconut Bars

These bars will have you dreaming of a hot summer day sipping on a refreshing beverage with one of those little fancy paper parasols

 


 

Lime in the coconut bars start with a clean cookie crust using Emmys Organics vanilla bean coconut cookies, making them gluten free, and are low glycemic.


Preheat the oven to 325 degrees farenheit


Combine 1/2 cup of almond butter and 9 cookies- 1 whole bag in a food processor, until a smooth consistency


Using an 8x8 pan, line with parchment and layer in crust, evenly distributing in the pan


In a bowl combine 3 eggs, plus 1 yolk

1 cup of lime juice

1 TBSP lime zest

1/2 cup pure maple syrup

Whisk together

Sift in 1 TBSP of coconut flour


Whisk vigorously


Pour into the unbaked crust and bake for 21-24 minutes until set, filling may be a tad jiggly upon pulling out, but will set up in the refrigerator, leave chill for 2 hours or so, cut and enjoy!
