Buffalo Chickpea Patties

Yes you read that right, BUFF CHICK PATTIES, minus the meat. These spicy protein packed patties are unbelievably easy and great to make ahead of time and reheat.

You can use whatever you like as a bun, I prefer lettuce, since I am gluten free.

For the patties you'll need:

1/2 cup rolled oats- Pulse in a blender or food processor until fine and flour like

1/2 cup quinoa, cooked and drained

1-15 ounce can of chickpeas, drained and rinsed (some cans vary from 14-16 ounces you can use any of them)

1 clove of garlic

2 Tablespoons hot sauce

1 teaspoon pepper

1 Tablespoon The New Primal Buffalo Seasoning, if you do not have this, add in a mixture of cayenne, paprika, ground mustard, onion powder

Several sprigs of chives, I added in around 5

Spicy "Blue Cheese" Topping:

1 cup of PLAIN Greek yogurt

Several tablespoons of hot sauce, to your liking

Add ALL of the patty ingredients in a blender OR food processor and pulse until everything is chopped and uniform texture, do not over blend or over pulse you do not want liquid patties.

Preheat a skillet on the stovetop on medium heat, add in coconut oil, ghee, or olive oil.

These will be sticky so be prepared.

Form into patties and cook 2-3 a time for around 6 minutes on each side.

Serve with your toppings and enjoy!

You should get around 6 patties from this recipe.

Linked below are my two favorite hot sauces by The New Primal, PALEO, WHOLE30 approved.
