Healthy Samoa Cookies

These easy, date sweetened cookies are guilt free and delicious!

Ingredients:

1 cup pitted dates soaked in hot water for 10 mins

1 1/2 cups of unsweetened shredded coconut

2 T Bomb Butter made by Blender Bombs

1/2 T cashew butter

*You can omit the bomb butter and just use any kind of nut butter to your preference

1/2 cup Chocolate chips to melt- I like a blend of HU kitchen dark gems and Enjoy Life semi sweet

*Optional Maldon Sea Salt sprinkle


Toast your coconut in the oven on 350 until golden brown.

In a food processor combine dates, coconut, nut butter and pulse until it forms a sticky dough.

Using a spoon, spoon the dough onto a pan with parchment, you should get around 7-8 cookies. Roll each into a ball and flatten down, press a hole in the middle and freeze. Melt the chocolate. Dip each cookie into the melted chocolate and drizzle on top, sprinkle with sea salt if preferred.

Refrigerate until chocolate is set, store in the refrigerator.
