Millennial Toast

For the past few years avocado toast has been trending, in restaurants, on Facebook and hashtags on Instagram 1.3 million hashtags to be exact. 😳 So why is this food trend so trendy? It’s nutritious, delicious and photogenic. The balance of acidic lemon dressed greens and the creaminess of the avocado play the perfect harmony in your mouth. So why not jump on the bandwagon and make my delicious version of this trendy treat.

For the toast I like to use a thicker slice of whole grain bread/ or a seeded grain gluten free bread Toast the bread and set aside


One avocado mashed or you can use the premade Wholly Guacamole branded avocado cups for a quick fix


One cup of greens (or a helping handful)- I use baby arugula, spinach, baby kale


Dressing for the greens

Freshly squeezed lemon juice~ 1/4 wedge

1/8 cup olive oil

a spoonful of mashed avocado to give the dressing some depth

1/4 teaspoon of whole grain mustard

sprinkle of salt and pepper

dash of garlic powder


Whisk together in a bowl and toss greens in dressing


One egg- You can poach, over easy, over medium, or hard boil whichever you like, I prefer mine in between runny and like a jammy egg.



Assembly time! Take the toast, spread the avocado on, add the greens, top with an egg and the sprinkle with EVERYTHING BUT THE BAGEL SEASONING! You can pick it up at Trader Joe’s, or many grocery stores now carry an off brand version of TJs.

Cut in half and enjoy your trendy brunch!
