This simple and easy one pot pasta meal will have you jumping for joy because you won’t have a million dishes to do!
Ingredients you’ll need:
One box of pasta your choice, pictured is a red lentil carrot blend
2 cups of spinach/raw or frozen
1 Red pepper medium chopped
3 cloves of diced garlic
1 jar of vodka sauce
In a large pot sauté your peppers, garlic and spinach together until cooked and set aside in a bowl/container.
Cook your pasta in the same pot as the veggies, gluten free pastas will take longer then regular wheat pastas.
Drain your pasta, add in the vodka sauce and the sautéed veggies and dinner is served.
